I remember when I shot an egg episode for my TV show years ago; one of the segments was how to hard-boil an egg so you didn’t get that gross, gray ring. Kelly said, “Isn’t that kind of basic?” And I thought, “Well, when I learned how, it changed a lot for me.” Because it’s just not about the gray ring, but doing it wrong also dries out the yolk and makes it chalky tasting. But since then I’ve had a jillion people tell me they no longer eff up hard-boiled eggs because of this. So now I use Kelly as sort of a reverse predictor of recipe success: if she says, “That’s a stupid recipe,” it’s almost guaranteed to be popular.
